Twinkle Twinkle Little Star Cake

Today, I am sharing a dreamy cake. The theme was “Twinkle Twinle Little Star Onederful is what you are” for my friend’s son’s birthday. 

This cake was a chocolate sponge cake filled with chocolate ganache, covered in white fondant and decorated with stars. Finished with a dog holding a fishing rod and a bunny on the top of the dog’s head. 

The whole cake design is inspired by “Rasha Rmeily”. However, the blue dog topper is a replica of his favourite snuggle blanket.

You could tell the cake was quite tall than other cakes I made before. Cakes more than 4” tall would be calling tall cakes or extended height cakes/a double barrel are one of the recent trends. They have the ability to make the overall design of the cake more tall, lean and elegant. 

This cake was 8” tall in total. Although in a normal situation would be called a double barrel (two full cakes with a cake board in between so it can be separated and served as two cakes – i.e. people can have extra servings and the price can be charged with two cakes instead of one). Well, this cake could only simply be called a tall cake as the bottom tier was a dummy. However, it still had plenty of coffee serving size for more than 20 guests.

New Trend Cookie Cake





Dear Cake Sweeties
I decided to make this new trending cookie cake just in time for Mother’s Day and my beloved Mum's birthday; a mouth-watering edible gift for her this year.

The recipe made two layers of chocolate wafer cookie dough in the shape of heart, with stabilised whipped cream in between and on top. I then decorated and topped with berries, macrons, sugar flowers, mini meringue kisses, red hearts, mini jazzies etc. 

What a great new trendy treat created by Israeli baker Adi Klinghofer, who makes large cakes in the shape of numbers and initials but soon learned it’s a common amongst many bakers and I can see why! They are just divine!

However, there are many different versions of this idea out there. Some bakers make them with a sweet tart dough, others use a basic sugar cookie recipe. I did a lot of reading and testing to see what I liked, and for these cookies, I ended up using a new-to-me recipe for chocolate wafer cookies!

Blue Ombre Petal Effect Smash Cake



Dear Cake Sweeties

It’s the smash cake this time! Leading up to the birthday boy’s upcoming #1, my friend asked me to make a cake for her son’s smash cake photo shoot. 

We decided on a vegan vanilla cake (her son has allergy towards egg, dairy and almond) filled with strawberry jam, once the cake layers were baked and cooled, I whipped up a batch of vegan whipped cream coloured with different shades of blue to pipe the effect called petal or mermaid-tail.

With a little bit of patience, anyone who can put frosting in a piping bag can achieve this cool effect. All you need to do is pipe circles of frosting vertically down the sides of a plain white cake (here I tinted very light blue) and use an offset spatula to smear the frosting circles about an inch horizontally across the cake. Then pipe another row of frosting circles slightly overlapping your last row of frosting smears and repeat the process until your entire cake is covered.

Then, my love for fondant decorations, I placed some twinkle stars randomly on the cake (inspired by the actual party birthday cake design in May).
